 Coconut Jowar Biscuits

Ingredients:

1 cup or 160 gm Desi sugar(Khand)/Brown sugar
1 cup or 200 gm unsalted butter, softened
2 cups or 200 gm Jowar/Sorghum flour
1/2 cup dessicated coconut
1 tsp baking powder or
1 tsp vanilla extract
1 tsp elaichi/cardamom powder
Milk, as needed for consistency
1 tbsp beetroot puree for color, optional

Instructions:

  1. Preheat oven to 350ºF.
  2. Cream butter and sugar for 5 minutes.
  3. Add jowar flour, dessicated coconut, baking powder, and vanilla extract or elaichi powder.
  4. Add a few tsp of milk as needed, if the batter is too thick.
  5. Add an optional 1 tbsp of beetroot puree for color.
  6. Fill a piping bag with the batter and pipe onto a parchment paper or silicone baking mat into 2-inch circles. 
  7. Bake at 350ºF for 10-12 minutes.
  8. Let cool and store in an airtight container for up to a month.
