Smashed Potato Quiche
Ingredients:
- 5 yellow or russet potatoes
- salt, to taste
- 1/4 tsp cracked black pepper
- 1 cup spinach leaves chopped
- 1/2 cup grape tomatoes, sliced or 1 regular tomato, diced
- 1/2 cup yellow/orange/red/ green bell pepper, diced
- 3 eggs
- 1/2 cup milk
- salt, to taste
- 1/4 tsp cracked black pepper
- 1/2 cup grated cheese (4-cheese Mexican blended cheese or cheddar cheese)
- 2 tbsp oil for the bottom of the baking pan/cast-iron pan
Instructions:
- Wash and boil the potatoes in a pot of salted water until fork tender.
- Preheat the oven to 350º F.
- Add oil to a cast-iron pan (or baking pan) and smash the boiled and softened potatoes into the pan.
- Sprinkle a pinch of salt and black pepper.
- Add chopped spinach leaves, diced tomatoes and bell peppers.
- Add eggs and milk to a bowl along with salt and pepper and whisk until well combined. Pour it over the vegetables.
- Sprinkle the grated cheese on top
- If using a cast-iron pan, heat the pan on medium-low heat to brown the smashed potato base for 5 minutes.
- Then transfer the pan to the preheated oven and bake for 30 min until the eggs are set and the cheese is golden brown.
- Let cool for 5 minutes, cut the quiche into slices and serve with marinara sauce or salsa or chili sauce.
