 Smashed Potato Quiche


Ingredients:

  • 5 yellow or russet potatoes
  • salt, to taste
  • 1/4 tsp cracked black pepper
  • 1 cup spinach leaves chopped
  • 1/2 cup grape tomatoes, sliced or 1 regular tomato, diced
  • 1/2 cup yellow/orange/red/ green bell pepper, diced
  • 3 eggs
  • 1/2 cup milk
  • salt, to taste
  • 1/4 tsp cracked black pepper
  • 1/2 cup grated cheese (4-cheese Mexican blended cheese or cheddar cheese)
  • 2 tbsp oil for the bottom of the baking pan/cast-iron pan

Instructions:

  1. Wash and boil the potatoes in a pot of salted water until fork tender.
  2. Preheat the oven to 350º F.
  3. Add oil to a cast-iron pan (or baking pan) and smash the boiled and softened potatoes into the pan.
  4. Sprinkle a pinch of salt and black pepper.
  5. Add chopped spinach leaves, diced tomatoes and bell peppers.
  6. Add eggs and milk to a bowl along with salt and pepper and whisk until well combined. Pour it over the vegetables.
  7. Sprinkle the grated cheese on top
  8. If using a cast-iron pan, heat the pan on medium-low heat to brown the smashed potato base for 5 minutes.
  9. Then transfer the pan to the preheated oven and bake for 30 min until the eggs are set and the cheese is golden brown.
  10. Let cool for 5 minutes, cut the quiche into slices and serve with marinara sauce or salsa or chili sauce.
