Coconut Cookies
Ingredients:
- 2 1/2 cups shredded coconut flakes or desiccated coconut (unsweetened)
- 1/2 cup almond flour or oat flour
- 1/4 cup coconut oil/olive oil/vegetable oil
- 1/4 tsp cardamom powder
- 1/2 cup maple syrup
Instructions:
- Preheat the oven to 350ºF and line a baking sheet with parchment paper
- Combine all the dry ingredients and pulse in a food processor if the coconut flakes are large. If using sweetened shredded coconut, skip the sweetener.
- Add coconut oil and maple syrup, and pulse until the mixture comes together.
- Scoop the dough onto the baking sheet using a tbsp measure, flatten the dough balls, place a few sliced almonds on top, and press.
- Bake for 12-15 minutes or until edges are golden brown. It may take longer to bake depending on the size of the cookies.
- Let cool for 30 minutes so the cookies can set and harden.
