Paneer Masala
Ingredients:
- 1/2 cup oil
 - 1 large onion, sliced thin
 - 6 garlic cloves
 - 2 inch ginger
 - A few coriander stems
 - 2 large tomatoes
 - 3 tbsp thick yogurt
 - 200 gm paneer, cut into medium cubes
 - 3 green chillies
 - 1 cup water
 - few drops of Kewra water
 - 3 tbsp coriander leaves, chopped
 
Whole Spices
- 1 tsp jeera
 - 3 small elaichi/cardamom
 - 1 large elaichi
 - 1 bay leaf
 - 1 piece of cinnamon
 
Ground Spices
- 2 tsp Kashmiri red chilli powder
 - 1 tsp turmeric
 - 2 tsp salt
 - 1 tsp red chilli powder
 - 1 tsp coriander powder
 - 1/2 tsp jeera powder
 - 1 tsp Kasuri Methi
 - 1 tsp garam masala powder
 
Instructions:
- Slice the onion into thin slices and fry them in a pan with 1/2 cup oil until golden brown. Remove the fried onions into a mixer jar, let cool and grind to a coarse paste along with some water if needed.
 - Remove the onion paste and to the same mixer jar, add garlic. ginger, coriander stems, tomatoes, and make a puree.
 - To the remaining oil in the pan, add whole spices, Kashmiri red chilli powder, turmeric, and tomato puree. Add salt and cook for a few minutes until the tomato puree thickens and oil separates.
 - Add the onion paste, red chilli powder, coriander powder, jeera powder and yogurt and mix thoroughly.
 - Add cubed paneer pieces and green chillies, and 1 cup of water and mix.
 - Add Kasuri Methi, garam masala powder, Kewra water, mix, cover with a lid and cook on low for 5 minutes.
 - Garnish with freshly chopped coriander and serve with naan, chapathi, roti, poori, or rice.
