 Paneer Masala


Ingredients:

  • 1/2 cup oil
  • 1 large onion, sliced thin
  • 6 garlic cloves
  • 2 inch ginger
  • A few coriander stems
  • 2 large tomatoes
  • 3 tbsp thick yogurt
  • 200 gm paneer, cut into medium cubes
  • 3 green chillies
  • 1 cup water
  • few drops of Kewra water
  • 3 tbsp coriander leaves, chopped
Whole Spices
  • 1 tsp jeera
  • 3 small elaichi/cardamom
  • 1 large elaichi
  • 1 bay leaf
  • 1 piece of cinnamon
Ground Spices
  • 2 tsp Kashmiri red chilli powder
  • 1 tsp turmeric
  • 2 tsp salt
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp jeera powder
  • 1 tsp Kasuri Methi
  • 1 tsp garam masala powder

Instructions:

  1. Slice the onion into thin slices and fry them in a pan with 1/2 cup oil until golden brown. Remove the fried onions into a mixer jar, let cool and grind to a coarse paste along with some water if needed.
  2. Remove the onion paste and to the same mixer jar, add garlic. ginger, coriander stems, tomatoes, and make a puree.
  3. To the remaining oil in the pan, add whole spices, Kashmiri red chilli powder, turmeric, and tomato puree. Add salt and cook for a few minutes until the tomato puree thickens and oil separates. 
  4. Add the onion paste, red chilli powder, coriander powder, jeera powder and yogurt and mix thoroughly. 
  5. Add cubed paneer pieces and green chillies, and 1 cup of water and mix. 
  6. Add Kasuri Methi, garam masala powder, Kewra water, mix, cover with a lid and cook on low for 5 minutes. 
  7. Garnish with freshly chopped coriander and serve with naan, chapathi, roti, poori, or rice.
