Tofu Vegan Kebabs


Ingredients:

  • 1 pack of firm tofu, crumbled
  • 2 1/2 tsp reduced-sodium tamari sauce or soy sauce
  • 1/2 small onion, finely chopped
  • 4-5 cloves of garlic, minced
  • 2 green chillies, minced
  • 2 tbsp fresh mint leaves, chopped
  • 3 tbsp fresh parsley, chopped
  • 1 tbsp tomato paste
  • 1/4 cup chickpea flour or all-purpose flour
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric
  • 1/2 tsp chilli powder
  • 1/4 tsp black pepper
  • salt, to taste

Instructions:

  1. Press the tofu to remove excess water or use extra-firm tofu to skip this step.
  2. Preheat the oven to 375ºF and line a baking sheet.
  3. In a large bowl, combine all the ingredients. Mix well with your hands and press the ingredients together until fully combined.
  4. Shape the mixture into kebabs, using 1/4 cup per kebab.
  5. Bake for 25 minutes, flipping the kebabs halfway through baking until golden brown.
  6. Alternatively, you can air fry, shallow fry or deep fry the kebabs.
  7. Serve them on a bed of hummus for even more protein or serve with chili sauce, coriander-mint chutney or chimichuri sauce.
