Tofu Vegan Kebabs
Ingredients:
- 1 pack of firm tofu, crumbled
- 2 1/2 tsp reduced-sodium tamari sauce or soy sauce
- 1/2 small onion, finely chopped
- 4-5 cloves of garlic, minced
- 2 green chillies, minced
- 2 tbsp fresh mint leaves, chopped
- 3 tbsp fresh parsley, chopped
- 1 tbsp tomato paste
- 1/4 cup chickpea flour or all-purpose flour
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric
- 1/2 tsp chilli powder
- 1/4 tsp black pepper
- salt, to taste
Instructions:
- Press the tofu to remove excess water or use extra-firm tofu to skip this step.
- Preheat the oven to 375ºF and line a baking sheet.
- In a large bowl, combine all the ingredients. Mix well with your hands and press the ingredients together until fully combined.
- Shape the mixture into kebabs, using 1/4 cup per kebab.
- Bake for 25 minutes, flipping the kebabs halfway through baking until golden brown.
- Alternatively, you can air fry, shallow fry or deep fry the kebabs.
- Serve them on a bed of hummus for even more protein or serve with chili sauce, coriander-mint chutney or chimichuri sauce.
