Sweet and Sour Lime/Lemon Chutney
Ingredients:
- 1 tbsp coriander seeds
- 1 tsp cumin seeds
- 1tsp fennel seeds
- 1/4 tsp fenugreek seeds
- 1 tbsp red chilli powder
- 1 tbsp Kashmiri red chilli powder
- 1/2 tsp black salt
- 1 tbsp regular salt
- 20 limes/small lemons
- 1/2 cup jaggery
Instructions:
- Dry roast coriander seeds, cumin seeds, fennel seeds, and fenugreek seeds in a pan on low heat until aromatic (2-3 minutes). Let cool and grind to a fine powder.
- Add red chilli powder, Kashmiri red chilli powder, black salt, regular salt to the grinder jar and grind once again until combined.
- Wash the limes or small lemons and let them dry completely. Cut them into quarters and remove the seeds and any excess pith.
- Grind the quartered limes/lemons to a coarse paste.
- Add the paste to a hot pan along with 1/2 cup jaggery and cook until the jaggery is completely melted.
- Add the masala powder mixture and mix well.
- Let cool completely and add to a glass bottle or jar, and store in refrigerator for longer use.
