Sweet and Sour Lime/Lemon Chutney

 Sweet and Sour Lime/Lemon Chutney


Ingredients:

  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1tsp fennel seeds
  • 1/4 tsp fenugreek seeds
  • 1 tbsp red chilli powder
  • 1 tbsp Kashmiri red chilli powder
  • 1/2 tsp black salt
  • 1 tbsp regular salt
  • 20 limes/small lemons
  • 1/2 cup jaggery

Instructions:

  1. Dry roast coriander seeds, cumin seeds, fennel seeds, and fenugreek seeds in a pan on low heat until aromatic (2-3 minutes). Let cool and grind to a fine powder.
  2. Add red chilli powder, Kashmiri red chilli powder, black salt, regular salt to the grinder jar and grind once again until combined.
  3. Wash the limes or small lemons and let them dry completely. Cut them into quarters and remove the seeds and any excess pith.
  4. Grind the quartered limes/lemons to a coarse paste. 
  5. Add the paste to a hot pan along with 1/2 cup jaggery and cook until the jaggery is completely melted.
  6. Add the masala powder mixture and mix well.
  7. Let cool completely and add to a glass bottle or jar, and store in refrigerator for longer use.
