Almond Cake

 Almond Cake



Ingredients:

2 eggs, separated into yolks and whites
1/2 cup sugar/coconut sugar/monk fruit extract/honey/maple syrup
1 tbsp vanilla extract
3/4 cup almond flour
1/2 tsp baking powder
a pinch of salt
2 tbsp milk(if batter is too thick)
2 tbsp sliced almonds

Preparation:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Prepare an 8-inch round pan by placing a parchment paper at the bottom, or grease and flour the cake pan.
  3. Separate the eggs into yolks and whites in separate bowls.
  4. Beat egg yolks and sugar in a bowl until pale and fluffy. 
  5. Add vanilla extract and mix.
  6. Add almond flour, baking powder, and salt, and mix. If the batter is too thick, add a couple of tablespoons of milk.
  7. Beat egg whites until stiff peaks form, and gently fold into the batter.
  8. Pour the batter into the prepared pan, and gently tap on the counter to even it out and to remove any large air bubbles.
  9. Sprinkle the sliced almonds evenly on top of the batter.
  10. Bake at 350 degree F for 25-30 mins.
Variation: You can add lemon zest/ dried cranberries/ shredded coconut to make variations of this basic almond cake recipe.
