Almond Cake
Ingredients:
2 eggs, separated into yolks and whites
1/2 cup sugar/coconut sugar/monk fruit extract/honey/maple syrup
1 tbsp vanilla extract
3/4 cup almond flour
1/2 tsp baking powder
a pinch of salt
2 tbsp milk(if batter is too thick)
2 tbsp sliced almonds
Preparation:
- Preheat the oven to 350 degrees Fahrenheit.
- Prepare an 8-inch round pan by placing a parchment paper at the bottom, or grease and flour the cake pan.
- Separate the eggs into yolks and whites in separate bowls.
- Beat egg yolks and sugar in a bowl until pale and fluffy.
- Add vanilla extract and mix.
- Add almond flour, baking powder, and salt, and mix. If the batter is too thick, add a couple of tablespoons of milk.
- Beat egg whites until stiff peaks form, and gently fold into the batter.
- Pour the batter into the prepared pan, and gently tap on the counter to even it out and to remove any large air bubbles.
- Sprinkle the sliced almonds evenly on top of the batter.
- Bake at 350 degree F for 25-30 mins.
Variation: You can add lemon zest/ dried cranberries/ shredded coconut to make variations of this basic almond cake recipe.
