Chocolate Mug Cake
When you need to satisfy your sweet tooth in less than 5 minutes sans the guilt!
Chocolate Mug Cake
Ingredients:
3 tbsp almond flour
2 tbsp sugar (substitute monk fruit extract or any sweetener of your choice)
2 tbsp cocoa powder (Ghirardelli Premium Baking 100% cocoa unsweetened recommended)
1/4 tsp baking soda
a pinch of salt
2 tbsp coconut oil, melted
1 egg
1/4 tsp vanilla extract
5-6 chocolate chips, optional (Ghirardelli 60% cacao chocolate chips recommended)
1/4 tsp powdered sugar sprinkled on top, optional
Vanilla ice cream/whipped cream and berries, optional
Preparation:
- Grease a coffee mug (8 oz. or larger) with some coconut oil.
- Combine all the wet ingredients first.
- In a glass bowl, melt the coconut oil until completely melted. Make sure it is warm but not hot.
- Add one egg and mix thoroughly.
- Add vanilla extract and mix.
- Add sugar, salt, baking soda, cocoa powder, and almond flour, mixing well after each addition.
- Pour the batter into the greased coffee mug and top with the chocolate chips.
- Microwave on high for 1 minute.
- Let rest for one minute and enjoy with a scoop of vanilla ice cream, or whipped cream and berries.
Note: You can multiply the ingredients as needed to make multiple mug cakes or one large cake.
