Kosambari/Yellow Moong Salad

A simple South Indian lentil salad that can be a side dish/accompaniment to any meal

Kosambari

Ingredients:

1 cup yellow moong dal
1 large carrot, grated
1 cucumber, diced
1 or 2 green chillies, finely chopped
1/4 cup fresh coconut, grated
salt to taste
2 tbsp lemon juice
2 tbsp chopped coriander leaves, for garnish

Seasoning:

2 tsp oil
1/2 tsp mustard seeds
a pinch of hing powder
1 red chilli

Preparation:

  1. Wash and soak moong dal for 1-2 hours. They should break easily when tested. Drain the water thoroughly.
  2. Mix all the above ingredients except seasoning.
  3. Prepare the seasoning, let cool, and add to the salad. 
  4. Combine all the ingredients thoroughly and rest for an hour or longer to let the flavors combine.
