Kosambari
A simple South Indian lentil salad that can be a side dish/accompaniment to any meal
Ingredients:
- 1 cup yellow moong dal
- 1 large carrot, grated
- 1 cucumber, diced
- 1 or 2 green chillies, finely chopped
- 1/4 cup fresh coconut, grated
- salt to taste
- 2 tbsp lemon juice
- 2 tbsp chopped coriander leaves, for garnish
Seasoning:
- 2 tsp oil
- 1/2 tsp mustard seeds
- a pinch of hing powder
- 1 red chilli
- Wash and soak moong dal for 1-2 hours. They should break easily when tested. Drain the water thoroughly.
- Mix all the above ingredients except seasoning.
- Prepare the seasoning, let cool, and add to the salad.
- Combine all the ingredients thoroughly and rest for an hour or longer to let the flavors combine.
